Apple Spice Pancakes
1.5 cups spelt flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground nutmeg
1/2 tsp sea salt
1 medium organic apple, grated (about 1 cup) plus 1.5 tsp fresh lemon juice
1 cup almond milk
1/2 cup organic unsweetened applesauce
1/4 cup liquid sweetener like agave nectar or maple syrup
1 tbsp sunflower oil + more for cooking
Whisk together the flour, baking powder, baking soda, nutmeg, and salt. Whisk in grated apple coating well and try to avoid clumping. Add the milk, applesauce, sweetener, and oil and mix well.
Portion the batter on a hot and lightly oiled skillet and cook on medium to medium-high for about 4 minutes then flip over and cook for another 2-3 minutes, or until golden brown.
Serve with maple syrup or your favourite fruit slices.

I'm off to the Mandarin with the fam, the great taste of non-authentic Chinese food. It's the only place my grandparents will go now! I wonder what it is about Portuguese people the the Americanized buffet experience.
